You win some, you lose some...

I was all set to chicken out on cooking the Singapore noodles after the last incident, but decided at the last minute to go ahead with it. This time however I cooked a back up meal of Ham steak and potato smilie faces for the girls 'just in case' ;)

Now before you read any further, keep in mind I do not profess to be a chef extraordinaire. I usually keep to fairly quick and easy meals, so trying out these new recipes has been a mixture of success and partial failures. What can I say - I'm a glutton for punishment.

All through the cooking process that night, Brooke kept making super positive comments like: "I LOVE noodles Mummy!" and "That smells sooooo good Mum!" and "I'm going to eat up all my dinner tonight!". Bless her heart she was trying so hard to keep a positive frame of mind this time. I made sure to stress that I would NOT be angry with her this time if she didn't like the noodles. I hadn't cooked these before, and it would be a first for both of us - they may turn out yummy, and they may not. In the end, I ran out of soy sauce for part of the recipe, so the noodles didn't have quite enough moisture in the sauce and clumped together a bit, but they still tasted fine. Brooke had a taste and timidly declared she didn't like it, but Elisa surprised us and had a large helping of it. Funnily enough it tasted even better as left-overs the following day.

My attempt at the couscous salad last week wasn't too successful either - I over soaked the couscous, and it got all gluggy. (I wasn't watching the timer properly and the 5 minute soak turned into 15 mins, so that was MY fault, not the recipes). On the other hand, last night I cooked a meatloaf in the crockpot, and it turned out perfectly! I've never cooked a meatloaf before, but it was SUPER quick and oh so easy - there really wasn't any way for me to fail this one:

500g mince meat
500g sausage meat
1 x grated carrot
2 x grated zuchinis
1 x 45g packet of tomato and onion soup mix

Squish it/mix it all together, form it into a loaf shape, and place it in a crockpot (lowered in on a length of baking paper). Cook on high for 4-6 hours. That's it.
Delish! I served it with mixed veges and mashed potato. The girls loved it and just about cleared their plates. Totally surprised me.

I've yet to sort out my meal plan for next month, but there'll be some more new recipes in it again just to keep it interesting. And if they fail, my kids are happy to eat Weetbix anyway :D

Will definitely try the meat loaf. Crock pot recipes come in so handy.
Next time I make the Hawaiian Chicken I'll leave out the ginger altogether and maybe halve the curry.

Long time no see! I am going to have to come back and read some more and check out your recipes! I am definitely going to crock pot meatloaf.
